Aioli recipe

A mayonnaise-like sauce full of garlic. Delicious for dipping fries!
Makes: 1 cup

Ingredients:
1 or 2 garlic cloves
pinch of salt
1 egg yolk
1 teaspoon water
1 cup olive oil
Preparation:
- Prepare the garlic by cutting off the ends, peel it and then chop it.
- Using a mortar and pestle make a paste with the garlic and a pinch of salt – the salt helps to both season the aioli and keeps the garlic from sliding around too much when grinding.
- In a bowl, whisk together the egg yolk, water and the garlic paste until well combined.
- Start adding the oil very slowly. Add a drop at a time, continually whisking. Once it starts looking like a mayonnaise (after about a quarter of the oil) you can start adding it faster. If it separates then keep whisking until it reforms and then continue adding the oil.
Try adding some lemon juice for a sharper flavor.
