Bread Sauce recipe
A perfect sauce to go with roast turkey. Always a favorite!
Serves: A whole turkey
Prep time: 30 minutes
Cooking time: 3 hours
6 oz white bread crumbs
20 oz milk
1 onion, peeled and quartered
1 bay leaf
half a dozen peppercorns
grated fresh nutmeg
3 fl oz cream (single or double)
salt & pepper
1 oz butter
Place the onion, (use the skin in the giblet stock), milk, crumbled bay leaf, peppercorns and grated nutmeg in a saucepan large enough to take all the ingredients. Put on the lowest heat possible and allow to infuse for several hours, you want the onion to be cooked and soft.
Blitz it all with a food processor until smooth.
Add the breadcrumbs and stir. Add a generous ounce of butter and stir whilst it thickens.
Add cream to taste, (probably 3 fl oz will do).
Adjust seasoning and add more butter if it will take it – this one if for flavor not your diet!
