<p>Thicker than its European cousin the American pancake is a sweet treat for breakfast. Often served with maple syrup as a side to eggs and bacon.</p>
<p>Serves: 4-6 depending on thickness</p>
<p>Prep time: 5 mins<br />
Cooking time: less than 10 minutes</p>
<h3>Ingredients:</h3>
<p>5oz / 135g plain flour<br />
1 tsp baking powder<br />
½ tsp salt<br />
2 tbsp caster sugar<br />
5oz / 130ml milk<br />
1 large egg, lightly beaten<br />
2 tbsp melted butter</p>
<h3>Preparation:</h3>
<ol>
<li>Sift the flour into a bowl and mix in the remaining dry ingredients.</li>
<li>In a separate bowl whisk together the egg and milk then add the melted butter.</li>
<li>Stir the milk mixture into the dry ingredients and stir out the lumps</li>
<li>Leave to sit for half an hour</li>
<li>Heat a frying pan over a medium heat and add a knob of butter</li>
<li>Add half a ladle of mixture to the pan and leave until there are bubbles bursting on the top, at this point turn the pancake and cook until both sides are golden</li>
<li>Serve with maple syrup</li>
</ol>
<p>To make blueberry pancakes add a handful of blueberries to the mixture before adding to the pan.</p>

<p>A tasty fruity snack, quick and simple to prepare and very tasty!</p>
<p>Serves: 10-15<br />
Prep time: 15 mins<br />
Cooking time: 25 mins</p>
<h3>Ingredients:</h3>
<p>9 oz / 250 g butter<br />
9 oz / 250 g caster sugar<br />
6oz / 175 g golden syrup or molasses<br />
16oz / 450 g  oats<br />
pinch of ground ginger<br />
2 apples, peeled and chopped</p>
<h3>Preparation:</h3>
<ol>
<li>Line an 8&#215;12 cake tin with parchment paper and preheat oven to 350°F/180°C</li>
<li>Combine butter, sugar and golden syrup in a pan, stirring to melt until the sugar has dissolved.</li>
<li>Remove from heat and add the apples and ginger, then the oats.</li>
<li>Transfer mixture to the cake tin and spread out evenly. Bake for 20-25 minutes.</li>
<li>Cut into 10-15 slices and allow to cool before removing from cake tin.</li>

<h3>Ingredients:</h3>
<p>1 3/4 cups flour<br />
3 teaspoons baking powder<br />
1/2 teaspoon salt<br />
2 beaten egg yolks<br />
1 1/3 cups milk<br />
1/2 cup oil<br />
2 stiff-beaten egg whites<br />
Berries of choice &#8211; strawberries, blueberries etc.<br />
Dusting of powdered sugar</p>
<h3>Preparation:</h3>
<ol>
<li>In a large bowl combine the flour, baking powder and salt. In a separate bowl mix the egg yolks and milk.</li>
<li>Mix the milk mixture into the dry ingredients, followed by the oil.</li>
<li>Fold in the egg whites.</li>
<li>Cook in your waffle maker and top with berries and powdered sugar, and if you feel indulgent perhaps some ice cream too!</li>

<h3>Ingredients:</h3>
<p>Cheddar Cheese, grated  3oz<a href="http://fitpigrecipes.com/recipes/el-pato-salsa/"><br />
El Pato salsa</a> (Sauce) 220g<br />
Eggs 2<br />
Butter 1 tsp</p>
<h3>Preparation:</h3>
<p>Heat the butter in non-stick pan. Add half of the El Pato sauce in the pan and crack two eggs into the pan making sure not to break the yolk and add the remainder of the sauce to the pan. Finally add the cheese and cover the pan on a low heat until the cheese melts.</p>
<p>Serve with toasted bread.</p>
