Chocolate Victoria Sponge Cake recipe

Chocolate Victoria Sponge Cake

A light and delicious chocolate sponge cake when paired with tea.

Serves: 6-10
Prep time: less than 15 mins
Cooking time: 20-25 mins

Ingredients:

6oz / 170g Butter
6oz / 170g Caster Sugar
3 eggs
6oz / 170g Self raising flour
1tsp Cocoa powder
Butter cream filling
2oz butter
1oz icing sugar
½ tsp cocoa powder

Preparation:

  1. Cream butter and sugar
  2. Gradually add beaten eggs
  3. Fold in flour and cocoa powder
  4. Pour in equal measure into two greased cake tins
  5. Preheat oven to 180c / 350f
  6. Place both tins on same shelf
  7. Cook for 20-25 mins
  8. Cooked when knife comes out clean.

Butter Cream Filling

  1. Put in bowl and stir till smooth

    I made this using a 9 inch cake tin and there was only enough mixture for one cake that size. It worked well using the filling as an icing instead, but otherwise I'd suggest doubling up the ingredients or using cake tins smaller than 9″.
