Green Pork Chili by Nick W

A stew-like dish, pale, and not a bean in sight!

Serves: 2 – 4
Preparation time: Minimal
Cooking time: 2 to 2 1/2 hours

Ingredients:

1lb (450g) lean pork (boned shoulder is good)
1 onion, chopped
2 tbsp (1 oz?) lard
1 tbsp flour
1 green chilli pepper, de-seeded and chopped
2 large potatoes, chopped
1 tomato, chopped
1 clove garlic, chopped
Salt

Preparation:

Put the pork into a pan with 4fl oz (120ml) water, and cook for about 1 ½ hours or until tender.

Allow to cool, then strain, reserving the cooking liquid. Trim off any fat and discard. Shred the meat finely with your hands.

In the same pan make a roux with the lard and the flour, cooking it gently and stirring it all the time until it browns.

Add the cooking liquid from the pork, the pork itself, the chillies, onion, potatoes, tomato and garlic.

Cover with cold water. Bring to the boil and simmer until the potatoes are cooked.

Add salt to taste.
