Chicken Molé recipe
A traditional Mexican dish of chicken in a spicy sauce thick sauce. Each family has their own variation and this one is cut down from the ingredient list that can sometimes top one hundred items, but still contains many flavors including chocolate and nuts.

Cooking time: 5 minutes
Ingredients:
3lbs Chicken (Legs and thighs)
1 Onion
2/3 cup Flour
3 tomatoes
2 Dry Pasilla
2 Chile California (Dry)
4 cloves Garlic
2 Bay Leaves
¼ tsp Cumin
1tsp Sesame Seeds
¼ cup Oil
Preparation:
Boil 3lbs of chicken and the onion in a pot. Drain the chicken. Save the chicken broth. In a separate pot boil 3 whole tomatoes, 2 dry pasilla and 2 dry california chiles for 10 minutes. Once boiled remove the seeds from chiles. Add the chicken broth to the tomato mix and add the garlic, bay leaves, cumin and the sesame seeds until it is a runny sauce.
In a pot add ¼ cup of oil, fry the flour until it is a light brown color then slowly add the sauce, making sure to stir continuously so it does not go lumpy once it starts boiling. Add the chicken place the lid on the pot and boil for 5 minutes.
Serve with Mexican Rice and tortillas.
