Potato Salad with Anchovies recipe
A potato salad, best served at room temperature at a barbeque with chilled beers and rare steaks.
Serves: 6 – 8

Cooking time: 20 mins
2-3lbs of new Potatoes
2 cloves garlic
1/2 an onion
2 or 3 anchovy fillets
a few twists of pepper
several tablespoons olive oil
Boil the potatoes until tender, drain and set aside.
Finely chop the onion and crush the garlic, sauté in olive oil, meanwhile chop the anchovies small and add to the onion and garlic mixture. Cook until the onions/garlic are tender but not browned and the anchovies starting to dissolve. Add a few twists of pepper.
Pour the oil, onions etc. over the warm potatoes and gently toss.
