Roast Tomatoes recipe
This really concentrates the flavour of the tomatoes, make sure you use ripe, flavouresome ones!
Preparation time: 5 mins
Cooking time: 1 hour
3 lb / 1.4 kg Tomatoes, sliced 1/2 inch thick
3 Large cloves of garlic, quartered lengthwise
2 Red onions, coarsely chopped
12 Basil leaves
Approx. 4 tbsp Olive oil
1 “slug” Balsamic vinegar
4 tablespoons of water
Salt and pepper
Pre-heat the oven to 200°C/392°F/Gas Mark 6
Lay the chopped onions and quartered garlic in a shallow roasting tray, drizzle over half the olive oil, add the balsamic vinegar and water, mix to coat.
Lay the sliced tomatoes over the top and drizzle the rest of the oil over the top, add salt and freshly ground pepper.
Place in the pre-heated oven for 50 – 60 minutes until the tomatoes are soft and starting to brown.
