Shrimp tacos with guacamole recipe

1 avocado, cubed
3 tbsp finely chopped red onion
2 tbsp chopped fresh cilantro
1/2 jalapeno pepper, finely chopped
1 tbsp fresh lime juice
1/2 tsp salt
1 lb peeled and deveined medium shrimp
1 1/2 tsp chile powder
1 tbsp olive oil
8 corn tortillas (6″)
- Prepare the guacamole by combining the avocado, red onion, jalapeno, lime juice and 1/4 tsp of the salt. Cover and refrigerate until needed.
- Heat the oil in a non-stick pan over a medium heat and cook the shrimp until opaque – 2 to 3 minutes per side.
- Warm the tortillas on a skillet over a medium-high heat – about 30 seconds per side.
- Divide the shrimp between the tortillas and top with guacamole.
